Mocha Chocolate Chip Cookies

While sitting on my couch wondering what to bake one day, I decided mocha chocolate chip 
cookies sounded pretty amazing (coffee AND chocolate, who could resist!) So, I jumped on 
my phone and went straight to my trusty Google search to look for a recipe. After reading
through a bunch of different recipes and not finding one that I liked, I decided to 
improvise. What came of this experiment was a soft, rich, amazingly chocolaty cookie that 
doesn't last more than 48 hours in our house. Check out the recipe below!

Mocha Choc Chip Cookies

2 1/4 cups all-purpose flour
1/3 cup unsweetened cocoa powder
1 tsp baking soda
1/2 tsp salt
1 cup (2 sticks) butter, softened
3/4 cup sugar
3/4 cup packed brown sugar
2 eggs
2 cups (12-oz. pkg.) Semi sweet chocolate chips
1 Tbs hot water
2 Tbs instant coffee
1 cup chopped walnuts (optional)

1. Preheat Oven to 375 degrees.
2. Stir together flour, cocoa, baking soda, and salt in a medium bowl.
3. Beat butter, sugar and brown sugar in large bowl on medium speed until creamy.
4. Add eggs, one at a time, and beat until smooth.
5. In a cup, mix the water and instant coffee until dissolved.
6. Pour coffee mixture into egg and sugar mixture; mix until combined.
7. Gradually add the flour mixture, beating well.
8. Stir in chocolate chips.
9. Add nuts, if desired. 
10. Drop by rounded teaspoonful onto ungreased cookie sheet.
11. Bake 8 to 10 minutes or until set.  Don't overbake.  They should be nice and soft 
after cooling.
12. Cool slightly; remove from cookie sheet to wire rack.

*Makes about 40 cookies. 
*My husband and brother both like to zap them in the microwave for about 20 seconds once 
they are cooled, giving them the fresh out of the oven feel
