Next time you have a cookout, try this colorful spin on pasta salad.
12 oz box tri-color rotini
3 eggs, boiled and chopped
2-3 stalks celery, chopped
12 oz jar roasted red peppers, drained and chopped
pasta 2
1 lb cubed ham
1/4 cup dill relish
1 1/2 cups miracle whip
Salt and pepper, TT
1. Boil the pasta according to the directions on the box.  Drain.  Run under cold water until all the pasta is cold.  Drain again.
2.  Add in all the ingredients (chop anything you haven’t already).
3.  Mix well.
4. Refrigerate until serving.
You can add onions if you wish.  My family is not big on raw onions, so we choose to not put them in our pasta.  My 18 month old son could eat this all day!  I love that he gets protein, vegetables, and starch all in one dish.
You can use this as a side for a cookout or for an awesome lunch!
