When I started this Gluten Free lifestyle, I fell in love with this one salad. When I was pregnant with my first son, I ate a chicken salad sandwich at Potbelly’s every other day, lol. So this reminds me of that salad a little bit.
All you will need is:
2 cups of cut up chicken breasts
1 chopped red pepper
1/4 cup of sweet onion
2 large pickles
2 chopped celery stalks
1/2 cup of chopped walnuts
1/4 cup of Mayo or Greek yogurt
1Tbs of Dijon Mustard
Mix all ingredient and viola!!! So easy and yummy! I like to eat it with avocado on the side or as a lettuce wrap!
